Italian seafood risotto recipe

1. Take a small bowl, put saffron in it, add appropriate amount of boiling water and soak for 30 minutes

Then use a large spoonful of the heated chicken soup and white wine to add it, stirring the rice in the pot constantly every time you add a spoonful. When the rice has absorbed most of the juice, add another spoonful of soup.

7. Repeat this step continuously, and the rice should always remain moist but not too watery. Turn off the heat when the rice is almost cooked but still slightly hard (the whole process takes about twenty minutes), pour in the various seafood and the remaining two tablespoons of chicken soup, cover the pot and simmer for 10 minutes to make the rice grains completely soft. Season with pepper and salt at the end and sprinkle parsley leaves on the seafood risotto before eating.
