In order to solve this problem, I will now teach you how to make braised pork.

1.1 Cut the fish vertically along the left side of the central spine, but do not cut it through. Cut it 2/3 of the way into the fish meat.

2.2 One fish tail. (The black carp that Shanghai people talk about is not sold here. I bought the silver carp tail)

3.1 First process the left half of the fish, cut from the middle 1/2 of the side of the fish, slice it horizontally, try to make the slices as large as possible, but do not cut it off. Similarly, prepare the right half of the fish, as shown in the picture.

4.2 Similarly, cut along the right side of the fish's central spine, but don't cut it off.

5.1 Then flip the part under the slice to the outermost side so that the whole fish tail is fan-shaped. Does it look like a skirt? Mermaid? Haha~~

6.2 Next, slice the fish meat horizontally along the spine toward the tail.

7.12 Put the processed fish tail into a plate and apply a little salt, especially on the skin, so that the skin will not break when frying.

8.21 Prepare the ingredients

9. When the oil in the pan is 40% hot, pour in the onion, ginger, garlic and dried red pepper segments.

10. A spoonful of Sichuan peppercorns

11.1 When the oil is 70% to 80% hot, add the fish tail and fry it briefly without turning it over.

12.2 Turn to low heat and fry until fragrant

13. Add cooking wine while hot

14. A large spoonful of chopped pepper sauce. (Optional)

15. Pour in boiling water until the fish is covered

16. A spoonful of dark soy sauce

17. Two tablespoons of soy sauce

18.7, 8 rock candies

19. After boiling over high heat, turn to medium-low heat, cover and simmer for 5-6 minutes (if you don’t add much water, you can use a spatula to scoop the soup and pour it on the fish continuously. Don’t turn the fish over, as it will break easily)

20. Thicken the soup and add a little water starch to thicken it.

21. Add chopped green onion and serve.
