How to cook pickled pepper crucian carp

1. Clean the crucian carp, cut diagonally on both sides, and evenly apply starch, cooking wine, white pepper powder, ginger slices and fine salt on the fish body for later use.

2. Add two spoons of cooking wine, one spoon of very fresh soy sauce, half a spoon of sugar, and appropriate amount of water to make the sauce. Cut onion into strips.

3. Slice the onion, ginger and garlic, cut the dried chili into rings, and cut the pickled pepper into shreds (note that the pickled pepper water can be added to the pot with the sauce to bring out the flavor). Set aside the peppercorns.

4. Heat the pan with cold oil, add the dried crucian carp and fry over medium heat until both sides are golden brown. Transfer to a plate and set aside.

5. Use the remaining oil from frying the fish in the pan, add onion, ginger, garlic slices, peppercorns, dried chilies and pickled peppers after the oil is hot and stir-fry until fragrant.

6. Pour in the sauce and stir-fry.

7. After boiling, pour in appropriate amount of water and bring to a boil.

8. Add the crucian carp, cover the pot and simmer on low heat for 15-20 minutes. Transfer the fish to a plate and set aside.

9. Cook the remaining sauce in the pot over high heat until it is reduced to your preferred consistency, pour in the shredded onion, add salt and water starch to thicken, and pour it over the fish.
