1. Peel the yam and cut into thin slices.

2. Put clean water in a pot. When the water starts to bubble, pour in the yam slices. After blanching quickly, remove the yam slices and put them in a basin of clean water for later use.

3. Cut the green and red peppers into sections.

4. Cut the ginger into shreds and slice the garlic.

5. Take a clean small bowl, pour in a small amount of clean water, pour in white vinegar in a ratio of 1:1 between clean water and white vinegar, stir well and set aside.

6. Put a pot on the fire, pour in vegetable oil when the pot is hot, then pour in red pepper segments, shredded ginger, and Sichuan peppercorns and stir-fry until fragrant.

7. Add the green pepper slices and stir-fry.

8. Pour in yam slices and garlic slices.

9. Then add the vinegar sauce made with water.

10. Stir-fry gently with a spatula.

11. Sprinkle in appropriate amount of fine salt, stir fry evenly and serve.
