Kung Pao Chicken is a very famous Sichuan dish. Compared with other Sichuan dishes, it is not as spicy, but what is special is that peanuts are used as its side dish. Kung Pao Chicken is made by cutting the chicken breast into dices of similar size, not too small, and frying the peanuts in advance until crispy and set aside. When cooking, add the diced chicken, peppercorns and other condiments into the pan and stir-fry. When they are almost cooked, add the peanuts and stir-fry for a while.

Take the tender chicken breast, use a knife to loosen the meat, cut it into a 3 mm square cross pattern, and then cut it into 2 cm square small pieces, add salt, and wet starch and mix well. The peanuts are fried in advance.

Put the wok on the fire, add the bottom oil, heat it up, add the peppercorns first, fry until fragrant, remove the peppercorns, add the diced chicken and stir-fry, add the bean paste and quickly stir-fry until it turns brown, add the cooking wine and stir-fry, then add the ginger and garlic and stir-fry until fragrant, quickly pour in the seasoning sauce (put the sugar, vinegar, soy sauce, broth, and wet starch in a bowl to make the sauce)

When the juice boils, add peanuts, stir-fry for a while, and add some chopped green onions.

The peanuts must be put into the pan before the dish is removed from the heat to avoid being stir-fried in the pan for a long time, which will affect the crispness of the peanuts.

Kung Pao Chicken, a traditional Guizhou cuisine dish, is made by stir-frying diced chicken, dried chili peppers, peanuts, etc. It tastes spicy and fresh, the tender chicken is matched with the crispy peanuts, it is fresh, fragrant and tender, slightly spicy and with strong flavors of ginger, scallion and garlic, and the main highlight is the spicy and slightly sweet and sour taste.

Peanut kernels (fried): Peanut kernels are rich in protein, unsaturated fatty acids, vitamin E, calcium, magnesium, zinc and other nutrients. They can enhance memory, resist aging, stop bleeding, prevent cardiovascular and cerebrovascular diseases, and reduce the occurrence of intestinal cancer. However, after being fried, they are hot and dry in nature, so it is not advisable to eat too much.
