1. Cut ginger and garlic into slices and set aside. After cleaning the small river fish, add cooking wine, half of the ginger slices and salt and marinate for five minutes.

3. Peel the carrots, wash them and cut them into shreds. Cut the tofu into shreds as well.

4. Put a wok on the fire, pour in cooking oil and heat it, put in the small river fish and fry until slightly yellow, then remove from the pan.

5. In another pan, add a little cooking oil, sauté ginger and garlic slices, then add the fried river fish and stir-fry briefly.

6. Pour in an appropriate amount of boiling water, bring to a boil, then reduce to medium-low heat, cover with a lid and cook until the soup turns milky white.

7. Season with salt and pepper.

8. Add shredded carrots and tofu skin and cook for one minute.

9. Add celery and leek segments and blanch them slightly, add a little MSG to enhance the flavor and then turn off the heat and serve.
