How to make salted egg and bitter melon soup

1. Wash a bitter gourd and use a peeler

2. Use a peeler to peel the bitter melon into thin slices and put them in a bowl for later use. Make another dish called [Bitter melon with honey sauce] (see my recipe for details)

3. Cut the bitter melon in half, remove the seeds, and cut the bitter melon into thin slices as shown in the picture.

4. Put water in a pot and bring it to a boil. Put the bitter melon slices in (add two drops of cooking oil to keep the bitter melon color). Cook for 2 minutes, then remove and immediately soak in cold water.

5. Prepare two cooked salted duck eggs, peel off the shells, and crush the eggs with chopsticks for later use.

6. Pour a small amount of oil into the pot, heat it to 60%, then turn to medium-low heat, add the salted duck eggs and stir-fry for a few times

7. Add a large bowl of water and bring to a boil (chicken broth is better)

8. Drain the soaked bitter melon slices and put them into the pot and continue to cook over medium-high heat for one or two minutes (the soup should be slightly more than the ingredients, but not dry)

9. Serve in a deeper plate/bowl. Be sure to use a spoon when eating. The bitter melon and soup taste great. The salty and fragrant salted egg is completely melted into the soup without a trace of bitterness.
