How to make Cantonese-style eggplant sandwiches

Health preservation is not about taking health care medicine, or spending money on maintenance. Well, now I will introduce how to cook the Cantonese-style eggplant sandwich.

1. Slice the eggplant without cutting the slices apart. Two slices form an eggplant sandwich.

2. Stuff the eggplant. Chop the pork and place it in the middle of the eggplant sandwich. Don’t put too much pork in to avoid breaking the eggplant.

3. Seasoning: Put 1 block of fermented bean curd, 1 spoon of sugar (adjust according to personal taste), 1 spoon of soy sauce and appropriate amount of chicken essence into a small bowl of water and mix well for later use.

4. Put some vegetable oil in a pan and fry the eggplant on both sides over medium heat until golden brown (the amount of oil should be enough as long as it does not stick to the pan)

5. Pour the seasoning in step 3 into the fried eggplant, simmer over high heat until the sauce is almost reduced, then add appropriate amount of salt and garlic.

6. Cook over high heat until the sauce thickens and serve. A delicious plate of stuffed eggplant is ready. The seasoning juice is absorbed by the eggplant, which is simply a rice killer.
