1. Wash the ribs and chop them into one-inch long pieces

2.1 After the moisture in the ribs is completely fried dry, it must be fried dry so that the ribs will not have a fishy smell. Pour a small amount of cooking wine, a tablespoon of dark soy sauce, and a spoonful of vinegar, stir well

3.2 Put a little more oil in the pan, bring to a boil over high heat, when the oil temperature reaches 90% hot, add ginger and ribs, stir fry until cooked, add two spoons of salt, continue to stir fry, and squeeze out the moisture in the ribs

4. Add half a pot of water and brown sugar. Note that this is one of the chef's secret recipes. Adding brown sugar or maltose will make the dish very bright red.

5. Transfer to a pressure cooker, cook over high heat until steam comes out, then simmer for 25 minutes

6. Finally, transfer to a wok to dry out the water. Note that when the water is finally dried up, only oil and sugar are left in the pot. Keep stirring to allow the syrup to evenly coat the ribs, forming a layer of glossy sauce. Add chicken essence and pepper when removing from the wok.
