1.121 Put vegetable oil in a wok. When the oil is very hot, slowly pour in the egg liquid and fry until cooked. Chop and set aside.

2.212 Wash and soak the sweet potato vermicelli, drain and chop. Pick and wash the chives, drain the water, chop them, and mince the ginger.

3. Add more oil to the wok and put in the peppercorns. Stir-fry over low heat until fragrant. Discard the peppercorns.

4. Pour in the vermicelli and stir-fry for three to five minutes, until the vermicelli absorbs the oil and expands slightly.

5.1 Boil the flour evenly with boiling water.

6.2 Mix leeks, eggs, vermicelli, minced ginger, dark soy sauce, cooking wine, a little thirteen spices, and sesame oil, then add salt and stir well to make the filling.

7. Cool it down, knead it into hot dough, and let it rest for about 30 minutes.

8. Knead the hot dough evenly, roll it into strips, and cut it into pieces.

9. Flatten it with your hands and roll it into a round piece.

10. Add the filling (I like to put more filling).

11. Wrap the vegetable dumplings into big dumpling shapes.

12. Use your hands to pinch out the lace (optional).

13. The wrapped vegetable dumplings are ready to be put into the frying pan.

14. When the oil in the pan is 70% hot, put the raw radish into the pan and fry over medium-low heat until golden brown. Remove from the pan and drain the oil.
