It wasn't until I bought rice noodles and ingredients online and made it once that I finally knew what the strange smell was. It turned out to be the taste of sour bamboo shoots. I still can't accept the smell and taste of it. So this time I made Guilin rice noodles with ingredients added according to my own preferences."

Materials

Main ingredient: 1 handful of rice flour (dry)

1 piece of barbecued pork, 2 tablespoons of sour beans, 1 tablespoon of soybeans, 3 tablespoons of peanuts (fried), 1 rapeseed (small), 4 scallions

Seasoning 1 spoon of vinegar 1 small bowl of marinade 1 spoon of chopped pepper some water 1 teaspoon of sugar

How to make Guilin rice noodles

1. Prepare the ingredients and cut them;

2. Soak the rice noodles in a basin with water for 5 hours, boil the water in a pot, and add the rice noodles;

3. Cook for a few minutes, scoop out the rice noodles several times to check their softness. The soup should be white in color for the best results.

4. Cook for 4-5 minutes, then remove from the water and rinse in cold water;

5. Then pour hot water into the pot again, add the rice noodles and cook for a while;

6. Drain the rice noodles and set aside. Heat the marinade and chopped pepper in a pot.

7. Pour in the ingredients and cook, then add water, sugar and vinegar to adjust the taste;

8. Rice noodles can be eaten dry or with soup, depending on your preference;

How to make Yulin beef brisket rice noodles

1. Production process: Soak the selected beef brisket in clean water for half an hour. After rinsing off the blood, move the beef brisket to a pot and simmer for half an hour. Take it out, cut it into small pieces, and take out the original juice for later use; wash the cut beef brisket again, dry it, and simmer it with seasoning for 20 minutes; put the ginger, onion and garlic in a hot oil pan and fry them until fragrant, sprinkle a little wine, then pour in the small pieces of beef brisket, stir-fry with the seasoning, put the spice bag in it, add 5 kg of meat and bone soup, simmer for 3 to 4 hours, pour in the original soup, boil it, and add appropriate amount of MSG.

2. The cooking method of rice noodles that go with beef brisket is also different from the general cooking method. Choose fine rice noodles made from high-quality white glutinous rice. Add the noodles to the pot after the water boils, stirring while cooking. When the noodles break when pulled lightly, scoop them out, soak them in clean water, scoop them out, dry them and set aside. When using, just heat them in boiling water, scoop them into a bowl, add the ingredients, sauce, and beef brisket, and you can also add Yulin-style foods such as beef brisket and meatballs.

Cooking Tips

1. Material selection: mainly use white beef brisket, rib meat, beef tendon and beef tongue, and other parts in appropriate amounts.

2. Seasoning: For every 15 kg of beef brisket, use 250 grams of peanut oil, 350 grams each of wine, salt and sugar, 5 fermented bean curds, 200 grams of ginger, and appropriate amounts of onions and garlic.

3. Spices: use sand ginger, angelica root, tangerine peel, cinnamon, insect shells, Sichuan pepper, fennel, star anise, licorice, cardamom, pepper powder, cloves, etc. Among them, 200 grams of licorice, 7 insect shells, and other spices weighing about 50 grams in total are packed in a cloth bag for use.
