3. Replace the water with clean water and put in the chopped pork skin. The ratio of pork skin to water is generally 3:1. Throw in a few scallion segments and ginger slices. Bring to a boil over high heat, then simmer over low heat until the soup in the pot is thick and the skin and meat are soft.

4. Take a clean plate, pour the cooked pork jelly into it, let it cool and solidify, and the pork jelly is ready.

5. Cut the solidified pork skin jelly into small cubes the size of mahjong.

6. Take half a cucumber, half a carrot, 2 or 3 stalks of coriander, and a small dish of fried peanuts.

7.Cut the cucumber and carrot into thin strips. Tear the coriander into small pieces.

8. [Prepare the sauce] Put the mashed garlic in a bowl, add chili powder, peppercorns and hot oil, sprinkle with coriander and chopped green onions, and finally add one spoon of light soy sauce, two and a half spoons of balsamic vinegar, salt and MSG, and mix well.
