Tips:

Add a little oil to the snow vegetables so that the steamed snow vegetables will not be dry.

Second course: Steamed eggplant with soy sauce and vinegar

Material

Ingredients: Eggplant, 400 grams,

Seasoning: 30g soy sauce, 15g chili oil, 30g vinegar, 2g pepper powder, 15g sesame oil, 1g salt

1. Remove the eggplant stems, cut the eggplant into 8 equal parts, and soak them in salt water to remove the astringency;

2. Squeeze out the water, place in a deep container, cover and cook on high heat for 8 minutes;

3. Arrange them neatly on a serving plate and pour the prepared sauce (soy sauce, chili oil, rice vinegar, pepper powder, sesame oil, refined salt) on them;

4. Cover with plastic wrap, cool in the refrigerator, and serve as a cold dish.

Third course: steamed fish

1 mandarin fish (Siniperca chuatsi, Osmanthus fish), about 600 grams, 4 slices of ginger, 2 scallions, 1 coriander, a pinch of pepper, 1 tablespoon of peanut oil, steamed fish sauce ingredients: 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 11/2 tablespoons of sugar

1.Cut off the old leaves of the green onion, wash it, cut one into two pieces, cut the other into shreds, and set aside. Wash and drain the bay leaves.

2. Clean the mandarin fish and place it on a shallow plate. Place 2-3 slices of ginger and long green onion segments under the fish body, and place two more slices of ginger on the fish surface.

3. Mix the steamed fish soy sauce and other ingredients, add two tablespoons of water, boil and set aside.

4. Take a steamer or Chinese pot, pour in water and bring to a boil, then steam the fish over high heat for about 7 minutes. After the fish is steamed, take it out, pour out the steaming fish juice, discard the ginger and scallions, and pour the steamed fish soy sauce on it.

5. Put chopped green onion and coriander on the fish and sprinkle with pepper.

6. Pour a tablespoon of oil into the pot, bring it to a boil, pour it on the fish and you can eat it.
