1. Braised beef noodles

Ingredients: 500 grams of beef, 500 grams of noodles, 250 grams of Chinese cabbage, 10 cups of water, 4 scallions, 2 slices of ginger, 8 cloves of garlic, 4 star anises, 1 chili; 1 cup of soy sauce, 6 cups of water, 1 tablespoon of wine, 1 tablespoon of spicy bean paste, and a little sesame oil.

Method: 1. Wash the beef, cut into pieces, and blanch to remove blood. 2. Heat oil in a pan, stir-fry shallots, ginger, scallion segments, star anise, chili peppers, and beef, add 1 cup of soy sauce, 6 cups of water, 1 tablespoon of wine, and 1 tablespoon of spicy bean paste, and cook over medium heat for about 1 hour. 3. Bring the water to a boil, remove the cooked noodles, and then blanch the Chinese cabbage. 4. Put a little sesame oil, chopped green onion, and beef broth in a bowl, then add noodles, vegetables and beef.

2. Eggplant noodles

Method: 1. Wash the eggplant, dice it, remove the seeds from the green pepper, wash it, dice it, soak the vegetarian meat until soft, and chop it. 2. Bring the water to a boil, add the noodles, cook until done, then remove and place in a noodle bowl. 3. Heat half a cup of oil, fry the eggplant until soft and remove it. Also fry the green pepper and remove it. Pour out the oil, then add other seasonings and vegetarian minced meat and stir-fry. 4. Add eggplant and green pepper, stir well, serve, and pour over noodles.

Secret to deliciousness: 1. After dicing the eggplant, it is best to blanch it in salt water so that the color will be more beautiful after frying. A higher oil temperature will prevent it from absorbing too much oil. 2 The color of eggplant and green pepper will not look good if they are cooked for too long, so don’t mix them in too early.

3. Noodles with gravy

Ingredients: yellow flower, black fungus, mushroom, green onion, egg

Method: 1. Soak mushrooms, black fungus, cauliflower; 2. Add oil to the bottom of the pot, stir-fry the minced meat, add chopped green onions and mushrooms, soy sauce, cooking wine, sugar, salt, black fungus, cauliflower, chicken essence, add appropriate amount of water and cook together; 3. Pour in the beaten egg liquid, thicken with starch and sprinkle with chopped green onions and minced garlic.

4. Sesame sauce noodles

Ingredients: 150 grams of sliced ​​noodles, 1 tablespoon of sesame paste, 1 medium spoon of chopped green onion, 1/2 teaspoon of fine salt, 1/2 teaspoon of MSG, 1 medium spoon of cooked salad oil, 500 grams of boiling water.

Method: 1. Take a soup bowl, pour in boiling water, put the cut noodles in, and cook on high heat for 5 minutes; 2. Put the noodles in a bowl with seasonings and mix.
