(3) Add an appropriate amount of rock sugar a few minutes before serving, then turn to high heat to allow the rock sugar and fruit to fully melt.

2. Apple Chips

Ingredients: 1 apple (about 250 grams), 1 tablespoon (15 ml) of freshly squeezed lemon juice.

(1) Wash the apples and cut them into 4 pieces. Remove the core but not the skin. Then cut the apples into very thin slices.

(2) Add 1 tablespoon of lemon juice to 250 grams of water and stir well. Soak the sliced ​​apples in the water for 15 minutes.

(3) Cover the baking tray with a layer of tarpaulin or thick baking paper and place the apple slices neatly on the baking tray or baking rack.

(4) Preheat the oven to 100°C. Place the baking tray or grill into the oven. You can put two trays in at a time, on different levels. Close the oven door and bake for about 2 hours, until the moisture in the apple slices is completely dried.

(5) After baking and cooling, the apple slices will become crispy. Remove them from the baking tray or grill. If not eaten immediately, please store them in a sealed box.

Tips:

(1) The key to making this apple crisp is that it is baked at a low temperature of 100°C for a long time to completely dry out the moisture in the apple slices. The specific drying time will vary greatly depending on the actual temperature of the oven and the thickness of the apple slices. It usually takes more than 2 hours. The dried apple slices are obviously dehydrated, but they may still be soft when pinched. Once they are removed from the oven and cooled, they will become very crispy. If the apple slices are still soft after cooling, it means that the moisture has not been completely dried and they need to be put into the oven to continue drying.

(2) The thinner the apple slices are, the shorter the drying time and the better the taste. So please try to slice it thinner.

(3) Soaking the apple slices in lemon water is to prevent them from changing color. Without soaking, the baked apple slices will be a gray-brown color. But it has no effect on the taste, so if you don’t mind, you don’t have to soak it.

(4) Apple slices placed on the baking rack are easier to dry, but they will become twisted and uneven during the baking process. The apple slices placed on the baking tray are baked to a flat shape. Be sure to cover the baking tray with oilcloth or thick wax paper. Do not cover it with tin foil or thin wax paper, otherwise it will be difficult to peel off after baking.
