Mediterranean Tomato Smoothie Recipe

1. Add water to the pot and turn on the fire. Use a knife to make a cross on the top of the tomato, remove the stem, and when the water is boiling, put the tomato into the boiling water and cook for 5 to 10 seconds on each side.

2. Put the scalded tomatoes in a basin of cold water. The skin will naturally crack and be easy to tear off.

3. Dice the peeled tomatoes. In some top French restaurants, only the tomato flesh is used. Put the seeds separately and squeeze the juice with a spoon and add it to the tomato flesh.

4. Add 1 tablespoon of red wine vinegar (or lemon juice), 1 tablespoon of sugar, salt and pepper, mix well

5. Cover with film and put in the refrigerator for 12 hours

6. Blend the marinated diced tomatoes into a paste and filter it through a fine mesh. Add pepper, salt, sugar and lemon juice as appropriate according to your taste. Mix well and put it in the freezer to freeze into ice cubes for later use. If you have an ice cream machine at home, you can pour the tomato juice directly into the ice cream machine and store it in the refrigerator after it solidifies.

7. For the final seasoning before serving, take the frozen tomatoes out of the refrigerator and leave them at room temperature for 5 minutes, while chopping the fresh basil. Put ice cubes into a blender, add fresh garlic, blend into a snowy texture, immediately add chopped basil, mix well, and serve in a cup
