1.1 Take out the cream and put it into the pot

2.2 Grind the almond slices into powder and the lemon peel into fine pieces, set aside

3.1 Take a bowl and add the egg and stir

4.2 Boil the butter until it melts and boils with burnt powder particles at the bottom, then cool it down and keep it at 50~60℃

5.1 Add honey and stir, then mix well

6.2 Beat the eggs and add powdered sugar and mix well

7. Add the sifted low-gluten flour, almond powder and baking powder and mix well. Do not over-mix after adding flour to avoid destroying the texture of the batter.

8. Add lemon zest and vanilla extract and mix well

9. Slowly pour in the butter and mix well into the batter

10. Cover with plastic wrap and refrigerate overnight. (8~9 hours)

11. Put the round nozzle into the piping bag. Stir the refrigerated batter again and pour it into a piping bag (you can put the piping bag on a wide-mouthed cup to make it easier to pour; use a spatula to scrape it to avoid waste), squeeze the batter into the Madeleine mold. It will be easier and cleaner to use a piping nozzle to squeeze the batter into the Madeleine mold! Bake in a preheated oven at 170°C for 12-15 minutes.

12. Pour the baked Madeleine into a plate and sift powdered sugar with a small sieve.
