1. Add water and sugar to the whipped cream, microwave for 90 seconds, take out and stir until the sugar is completely melted, then cool for later use.

4. Pour the egg yolk liquid and batter into the milk.

6. Preheat oven to 220C. While the tarts are preheating, fill the bottom of the tarts with egg and milk liquid, 70% full. There are 12 tarts per plate, which is just enough for two plates.

7. After the oven is preheated, place the baking trays in the upper and middle layers of the oven and bake for 25 minutes.

8. 15 minutes into the baking process, move the upper baking tray to the lower layer and the middle baking tray to the upper layer. Because different ovens have different temperatures, pay more attention to the color of the top layer during baking to avoid burning it. I used the Changdi 25B oven, 220C for 25 minutes, the temperature and time were perfect.
