How to make Yunnan fried meat

The difference between Yunnan fried meat and fried meat in other places lies in the marinating time. Yunnan fried meat takes a longer time, sometimes as long as five days. After five days, the meat is fried until golden brown and then soaked in oil. This preservation method can last up to several years and can be eaten in many ways.

Ingredients

Pork with skin, appropriate amount of salt 1 kg pork + 2.5 qian salt

Steps for making Yunnan fried meat

1. Marinate pork with salt for 5 days. 1 kg pork + 2.5 qian salt

2. Wash the marinated pork and cut it into pieces of required size

3. Add oil to the pan, fry the pork slowly over medium heat until golden brown

4. Fry until golden brown and remove

5. After cooling down slightly, place in a clay pot

6. Pour in oil and soak it. It can be stored for several months to a year. When eating, take it out and steam, fry or stir-fry it. It is very delicious.

Fried pork cutlet

Ingredients: 200g pork tenderloin

Accessories: 2 eggs, 100 grams of bread crumbs, cooking wine, salt, pepper, salad oil, tomato sauce, sugar

Steps for making fried pork chops:

1. Remove the fascia from the pork tenderloin, cut it into thick slices, loosen and thin it with a patter, sprinkle with salt, cooking wine and pepper and marinate for about 10 minutes.

2. Dip the pork tenderloin evenly in starch, egg liquid and breadcrumbs.

3. Heat the frying pan, add cooking oil, heat until it is 40% to 50% hot, then add the pork chops.

4. Fry until both sides are golden brown, remove from the oil and place on a plate. Take a small bowl and put tomato sauce in it for dipping.
