How to cook beef brisket with radish

1. Clean 2 pieces of beef tendons and set aside.

2. Wash and cut the beef brisket into pieces; peel and cut the white radish into pieces

3. Put the beef tendon in cold water, add peppercorns, bring to a boil and remove the foam. Then take it out and put it into a pressure cooker, add appropriate amounts of onion, ginger, star anise, peppercorns, cooking wine, light soy sauce, dark soy sauce, sugar, salt and water. High pressure, press for about 30 minutes.

4. Remove the foam from the beef brisket in the same way, then remove and drain.

5. Put oil in the pan and stir-fry the radish cubes to remove excess water. When slightly yellow, set aside.

6. In the pan where you fried radish, continue to add onion, ginger, star anise and peppercorns, then add in the beef brisket and stir-fry.

7. Continue to add cooking wine, dark soy sauce, sugar, rock sugar and other seasonings.

8. Add appropriate amount of water to stew the beef brisket. I have plenty of time today, so I use a casserole to slow cook it. If time is tight, I can use a pressure cooker.

9. Stew the beef brisket until it is well-cooked and can be pierced through with chopsticks. Remove the tendons and cut into pieces.

10. Add radish and beef tendon and continue stewing. The stewing time depends on each family's preference. My family likes it very soft and tasty, so it takes a little longer.

11. Cook over high heat until the sauce thickens. If you like to serve it with rice, you can keep some of the sauce. Remove from the pan and sprinkle with chopped coriander.
