How to make wheat bran original steamed buns

1. Prepare the raw materials.

2. Put the old flour and baking soda into a basin. (Please refer to the amount of baking soda in the basin, put a little first, and then add little by little)

3. Add appropriate amount of water to dissolve it.

4. Add flour and wheat bran and mix well.

5. Add the remaining water, knead into a smooth dough, cover, and ferment at room temperature. (About two hours)

6. Ferment until it is twice as large and take it out.

7. The risen dough will be slightly soft. Sprinkle an appropriate amount of dry flour on the table, flatten the risen dough, release the air, and knead it again into a smooth dough of moderate hardness and softness.

8. Knead it into a cylindrical shape (or long strip).

9. Use a sharp knife to divide the dough into appropriate sizes and shape them into raw dough for steamed buns. (You can choose long or round shape, mine is about 45 grams each)

10. Add enough cold water into the steamer, place the steaming rack on it, line it with corn leaves to prevent sticking, then put the raw steamed buns in, cover it and let it rise. (It’s summer now, and I’ve been drunk for 25 minutes)

11. Steam until it is 1.5 times larger, turn to medium heat, and when it starts to steam, turn to high heat for 15 minutes and then turn off the heat. Take out after 3 minutes and let it cool, do not simmer in the pot.
