How to make shrimp wontons

1. 250g shrimp meat, 250g minced meat, 4-5 slices of water-soaked magnolia slices (that is, bamboo shoots soaked in water and swollen), 400g wonton wrappers

2.1 Mix the shrimp meat (I cut it into small pieces in advance), minced meat, and diced bamboo shoots in a bowl, add a little sugar, salt, corn starch, salad oil, a little light soy sauce, and more white pepper.

3.2 Boil the soaked magnolia slices over high heat for about 10 minutes, remove from the water, drain and cut into small pieces.

4.1 After the filling is mixed, take out a wonton wrapper and put an appropriate amount of filling on one corner.

5.2 Use chopsticks to stir the filling in one direction. If it feels too dry, add appropriate amount of salad oil to adjust it.

6.1 Fold the wrapper around the filling inwards.

7.2 Fold the corner of the skin with the filling upwards.

8. Use both hands to pinch both sides of the wonton wrapper, twist it downwards, and bring it towards the middle so that it overlaps.

9. Press the closed wonton wrapper hard with your hands, otherwise the filling will come out when the wontons are cooked.

10. Wrap all the wontons according to the previous steps 5-9 and place them separately. Boil water in a pot, put in the wontons when the water boils.

11. While the wontons are cooking, you can prepare the ingredients for the wonton soup. I prepared dried shrimps, seaweed (shredded), and chopped green onions.

12. Place dried shrimps and seaweed at the bottom of the bowl, and add a little salt, light soy sauce and sesame oil according to personal taste. After the wontons are cooked, use a colander to scoop them out and place them in a bowl. Then pour the water used to cook the wontons on the wontons all at once. This will prevent the wontons from splashing. Finally, sprinkle some chopped green onions and a bowl of delicious and fragrant shrimp wontons is ready.
