How to make Kimchi (Korean sweet and sour radish)

People who are busy with work often order takeout and rarely eat at home. In fact, home-made meals are truly healthy and green food. Kimchi (Korean sweet and sour spicy radish) is a dish that is very suitable for busy people. It is also a good idea to use the holidays to forget about takeout and cook it at home.

1. Wash the dried radish and soak it in clean water for more than two hours, changing the water twice in the middle.

2. Marinate the soaked dried radish with salt and a spoonful of vinegar for one hour. Rub it two or three times with your hands to remove the bitterness and smell of the radish. Then wash it with clean water, drain it and set aside.

3. Chop the apple, garlic and ginger into very small pieces, and squeeze the orange juice for later use.

4. Pour a teaspoon of olive oil, a teaspoon of fish sauce, a tablespoon of sugar and the ingredients in Figure ⑤ into the chili powder. Put on disposable gloves and knead the chili powder with your hands until it becomes a paste and feels sticky. The hot sauce is ready.

Finally, pour the prepared chili sauce and dried radish into a container with a lid, mix well, press with your hands, cover it, place it in a cool place for one day in summer, and then put it in the refrigerator to wait for fermentation. It can be eaten in three to five days. The fermentation effect is best after a week.

7. The method of soaking dried radish is the same as above. Just change the seasoning.

8. Put four tablespoons of light soy sauce, one teaspoon of Maggi, one tablespoon of Lao Gan Ma Spicy Crisp, four tablespoons of white rice vinegar, two tablespoons of white sugar, and half a teaspoon of sesame oil in a bowl with a lid to make juice, then pour the radish in, mix well and press firmly, cover it and it can be eaten after one day. It would be better if you sprinkle some sesame seeds before eating.
