10. Beat until wet, with clear lines and a small curved hook when the egg is pulled up.

12. Pour the remaining egg whites back in and continue to stir evenly with a spatula.

13. Pour into a 6-inch removable bottom mold, smooth the surface and vibrate a few times to let the bubbles in the cake batter come out.

14. Preheat the oven to 170 degrees, wrap the bottom with tin foil, and bake for 25-30 minutes.
