How to make spicy hot pot chicken and duck wings

1. Prepare all the ingredients you need

Cut the back of the chicken wings into flower-shaped pieces, marinate with cooking wine, light soy sauce and salt for 10 minutes, slice the ginger, cut the garlic in half, cut the scallion into sections, cut the onion into half circles, cut the potatoes, bamboo shoots into strips, and cut the celery into sections.

4. Pour more oil into the hot pan and heat it until it is 80% hot. Fry the potato strips until golden brown.

5. Take out the potatoes and set aside

8. Chop the bean paste, spicy sauce, fermented black beans, and pickled peppers, add soy sauce and thirteen spices, mix well, and put in a bowl for later use.

9. Heat the pan, add a large amount of oil and heat until it is 80% hot. Add onion, ginger, garlic, dried chili peppers and Sichuan peppercorns and sauté until fragrant.

10. Add half of the onion and fry until fragrant

11. Add the prepared sauce and stir-fry until fragrant

12. Stir-fry the sweet potato flour until soft

13. Add all the vegetables and stir fry

14. Stir-fry the vegetables until cooked, then add the fried wings and potato chips

15. Stir-fry the wings for three to five minutes and add celery

16. Stir-fry the celery and add chicken essence.

17. Remove from heat and sprinkle with cooked sesame seeds before eating.
