Some people prefer to make glazed meatballs, but sometimes I am not good at making them and cannot make the meatballs that are crispy and fragrant. Especially for novices, the process is relatively complicated and they are worried that the result will be bad. What is the specific method for making this traditional glazed meatball?

Put 500 grams of flour into a bowl, pour 500 grams of boiling water on it and stir evenly, then beat in the same direction until there are no particles, the flour is even, fine, elastic, and resembles a thick paste (the whole process takes about 10 minutes, and it is best to be done by two people alternately, otherwise the arm strength will not be enough), add an egg yolk, and continue to beat in the same direction.

Heat a large amount of oil in a pan to 160-180℃, squeeze the beaten dough into large chestnut-shaped balls, fry them in the oil until they float up, and remove from the oil.

After the batter is heated, the outer layer condenses into the wall of the meatball, and the inner part is exhaled with the hot air, forming a hollow. At this time, take it out and break off the exhaled dough.
