3. Wash the fish, dry it with kitchen paper, add appropriate amount of salt and marinate for 10 minutes.

4. Heat the wok, pour in cooking oil, put in the fish pieces, fry both sides until slightly yellow, add ginger slices, and sprinkle in appropriate amount of wine.

5. Add appropriate amount of boiling water (cover about half of the fish pieces), bring to a boil over high heat, drizzle with soy sauce, add star anise, cover and cook over medium heat for about 15 minutes.

6. Boil down the water until only one third is left, add sauerkraut and oyster sauce, cook over high heat for one minute, add starch water, add coriander, and cook over high heat until the sauce thickens. It's done.

7. Serve on a plate.
