2. Chop the chicken feet into two halves in the middle.

3. Cook the soup. Put onion, ginger, garlic, bay leaves, nutmeg and a little salt into a casserole, add water and boil for 20 minutes (the amount of water depends on the amount of chicken feet to be soaked), then transfer to an enamel or ceramic basin to cool.

4. Put the chicken feet into a casserole (water covers the chicken feet), add cooking wine and salt and cook for 30 minutes.

5. Put the chicken feet into the cooked and cooled soup (just enough to cover the chicken feet), chop the pickled pepper and pour it on the chicken feet with the juice. If you worry that it will be too bland, you can also add a little salt.

6. Leave the soaked chicken feet at room temperature for 2-3 days.
