1. Remove the stems of the strawberries, wash them, and peel the mangoes for later use.

2. Put the chopped mango and strawberries into a cooking cup and beat them into mango puree and strawberry jam.

3. Add 50 grams of sugar to the beaten mango puree and strawberry jam respectively, then stir evenly and wait for the sugar to dissolve.

4. Use hot water to dissolve the gelatin powder until it is completely dissolved. You can also stir it over hot water to melt it.

5. Add the gelatin powder solution evenly into the mango puree and strawberry jam, stir well and set aside.

6. Pour the whipped cream into a bowl. The whipped cream needs to be refrigerated in advance. It is best to put ice water or ice bags outside the bowl when whipping the cream, which makes it easier to whip. Use an electric whisk at high speed for about 3 minutes.

7. Divide the whipped cream into two equal portions and put them into a bowl, then pour in the mango puree and strawberry jam respectively.

8. Then stir the mango puree cream evenly, stir the strawberry jam cream evenly, and the mousse sauce is ready. Set it aside for later use. If the temperature is high, refrigerate it.

9. Start preparing the cake dough and cut it into 2 slices of 1.5 cm. The bottom slice should be slightly smaller than the cake mold, and the top slice should be a little smaller than the bottom slice.

10. Start making the mousse cake. Place the cake slices at the bottom of the mold, then pour in the mango mousse sauce and smooth the surface.

11. Place the second piece of cake on top of the mango mousse sauce, then pour the mousse sauce on it, smooth the surface, and then put it in the refrigerator for 4 hours.

12. After 4 hours, heat the grape juice, then pour in the gelatin powder and stir until it is completely dissolved. Cool to room temperature. If it is too hot, the mousse sauce will melt.

13. Then pour the crystal sauce evenly on the mousse cake.

14. Put the mousse cake into the refrigerator and refrigerate for 30 minutes. After 30 minutes, place the fruit decorations prepared in advance on the cake. Do not place too many fruits, otherwise the mirror effect will not look good.
