3. Knead the tart crust into a smooth dough, wrap it with plastic wrap and let it stand for 30 minutes. (When the weather is hot, you need to put it in the refrigerator)

4. Beat the butter and flatten it to a thickness of about 3 mm. Keep in the refrigerator for later use.

5. After the relaxed dough is rolled into a size twice the size of the butter used for wrapping, cut open the plastic bag wrapped around the butter and place the butter as shown in the picture.

6. Cover the other side of the dough and seal it as shown in the picture. Gently press along the sealed side to expel the trapped air from the other unsealed side, then seal it tightly.

7. Use a rolling pin to roll it into a rectangle and then fold it. From this step on, just like the previous Portuguese egg tart crust, fold it four times three times. After each fold, put it in the refrigerator to relax the dough for more than 20 minutes before proceeding to the next step of folding four times.

9. When folding it in half, leave a little space in the middle. (When folding it in four for the second time, you need to leave a little in the middle of the first fold, as shown in the picture. This will reduce the possibility of oil leakage at the fold when folding it in half again.) Then fold it in half again, and the puff pastry is done! The prepared puff pastry can be used to make a variety of desserts such as puff pastry tarts, pies, butterfly pastries, Napoleon pastries, etc.

10. Roll the prepared puff pastry into a 27*36cm sheet, divide it into 12 9*9cm square pieces and place them in the egg tart mold. Relax for 20 minutes.

11. Add sugar to milk, heat in the microwave and stir until the sugar melts. (You can also heat it in a milk pan)

12. After the sugar and milk are blended, add the beaten egg liquid and sieve more than twice.

13. Finished product.
