How long does it take to cook pig's trotters?

Pig's trotters may not look delicious, but they are actually very delicious. In addition to being eaten as a main meal, they can also be eaten as a casual snack. Most delicatessens sell pig's trotters, and the taste is quite attractive. However, many friends still like to cook pig's trotters at home, believing that this is cleaner and safer. So, how long does it take to cook pig's trotters?

1000 grams of pig's front hoof, 250 grams of chestnuts, 50 grams of soaked shiitake mushrooms, 250 grams of seasonal vegetables, 3 scallions, 5 slices of ginger, 25 grams of sugar, 50 grams of cooking wine, 100 grams of soy sauce, 3 cups of soup, a little star anise, tangerine peel, cumin, Sichuan pepper, and pepper powder, and appropriate amounts of cornstarch and sesame oil.

Production process:

① Scrape and clean the pig's trotters, chop the inner bones into sections with the back of a knife (leaving the skin and meat connected), put them into boiling water, add onions, ginger slices, and wine (15 grams), cook over high heat for 10 minutes, remove from the water, drain, and evenly coat the skin with soy sauce (10 grams) and let it cool.

② Heat the pan, add oil, and when the pig’s trotters are 70% cooked, put them in and fry for 15 minutes. Then pour into a colander to drain the oil. Cook the chestnuts, remove the shells and membranes, and fry them in hot oil for 5 minutes.

③Take a clay pot, line it with a bamboo grate, pour in the soup, bring to a boil over high heat, then switch to low heat and put in the fried pig's trotters. Wrap star anise, tangerine peel, fennel and Sichuan peppercorns in clean gauze and put them into the pot. Add mushrooms, soy sauce (90 grams), wine (35 grams), sugar and MSG. Cover and simmer for 3 hours. Add the fried chestnut meat and simmer for another 30 minutes before serving. Pick up the cloth bag.

Ingredients: 3 pig's trotters, cooking wine, rock sugar, salt, vinegar, soy sauce

Method: 1. Wash the pig's trotters and cut them in half

2. Put the processed pig's trotters into a pot of cold water, add 1 spoon of cooking wine and half a spoon of vinegar (dried hawthorn is better) into the pot, cook on high heat for half an hour, then change to the keep warm setting and simmer for about 1 hour. Do not open the lid during the process.

3. Use chopsticks to poke into the meat. If you can’t poke into the meat, simmer it for a while longer.

4. Pour 4-5 spoons of soy sauce into the pot, turn on the cooking mode, cook for 20 minutes, then add rock sugar (7-8 pieces), and cook for another 10 minutes.

5. Finally, add a little salt (about 1 spoon) and wait for the juice to dry up.

Main ingredients: 4 pig trotters

Ingredients: 100 grams of soy sauce, 10 grams of fine salt, 5 grams each of cinnamon and pepper, 50 grams of green onion, and 20 grams of ginger.

Preparation method:

1 Scrape the pig's trotters to remove dirt and wash them clean. Cut the green onions into sections, cut the ginger into pieces and smash them.

2 Put the pig's trotters into a pot of boiling water, blanch them, take them out, cool them with cold water, put them back into the pot, add water (preferably enough to cover the meat), soy sauce, salt, aniseed, cinnamon, pepper, scallion segments, and ginger pieces. Simmer on low heat until cooked, then turn to high heat to reduce the sauce. Put the pig's trotters into a plate and serve.
