Chinese Pickles: Chinese Pickles is pronounced as "hong", which is the well-known pickled mustard greens and is also a good anti-cancer food. Because it is also a variety of mustard, it has a spicy taste and tastes better after being pickled. It can be used to stir-fry dried tofu, bean sprouts, shredded pork, and rice cakes. It can be paired with a variety of ingredients. I especially like to cook tofu stewed with snow vegetables.

Material

10 jins of Chinese mustard, 1 large pickle jar, 500 grams of sea salt - coarse salt/pickle salt

1. Rinse the Chinese mustard greens and dry them

2. Put the dried Chinese mustard greens into a basin in batches, sprinkle with sea salt, put on rubber gloves, and rub vigorously until it becomes soft.

3. Then put them into the washed and dried kimchi jar one by one.

4. Cover the lid and it can be eaten after 15-30 days.

5. When eating, use cold water to make it less salty and reduce the nitrite content.

Tips

After the snow vegetables are dried and there is no raw water left, rub them with salt to soften them, which can remove some of the spicy taste. The pickled snow vegetables taste better. When eating, rinse them with water and chop them into pieces for stir-frying.

If you stir-fry fresh snow vegetables directly, it is recommended to blanch them in hot water before frying, otherwise it will be spicy and bitter.

Use sea salt instead of table salt, because sea salt has large particles and good permeability, which is conducive to the ventilation of vegetables, and the salt can slowly penetrate into the vegetables, making the pickled snow vegetables very tasty.

It is not recommended to pickle them in pieces. Pickle them whole. When eating, wash them and cut them into pieces.
