1. Wash the grass carp, cut it in half from the back and slice it into 1 cm thick slices.

2. After cutting the fish fillets, sprinkle a little salt and mix well with your hands.

3. Add cooking wine, dark soy sauce (2 spoons, not too much, as it will affect the color of the smoked fish after frying), a little light soy sauce, black pepper, scallion, and ginger, stir well and marinate for 3-4 hours.

4. After marinating, take out the fish fillets, place them in a mesh basket to drain the sauce and set aside.

5. Put a proper amount of oil in the pan. When the pan is 90% hot, put in the fish fillets and fry until golden brown. Then turn over and fry the other side. After both sides are golden brown, continue frying for 2-3 minutes, then drain the oil and remove from the pan.
