How to make three-color steamed buns

The method of making three-color steamed buns is quite simple, and people who don’t know how to cook can easily learn it.

1. Dissolve the sugar in warm water and add 3 grams of yeast to activate it.

2. Slowly pour the activated yeast water into the flour and stir with chopsticks until it becomes flocculent, as shown in the picture. It does not need to be too soft because it will become soft after fermentation.

3. Knead the dough, set it aside, cover it with a wet cloth and let it ferment.

4. Steam the purple sweet potato (I didn’t add a picture because I shared the same purple sweet potato with the steamed cake), mix it with a small amount of water, sieve it, add a little sugar, not as much as white flour, because the purple sweet potato itself is sweet; add three grams of yeast to activate it.

5. Pour the yeast water you just prepared into the flour and mix it into flocculent form. Knead it into dough and cover it with a wet cloth to ferment. Mine has a little more water, because you will know after fermentation.

6. Add a little brown sugar, warm water and stir to dissolve. (I added a little sugar, but you can also add it, mainly because my family likes sweet.) Then add three grams of yeast to activate it.

7. Pour the yeast water into the flour and stir until it becomes flocculent. Knead it into dough and cover it with a wet cloth to ferment.

10. This is the fermented brown sugar dough. The volume has increased.

11. Sprinkle some dry flour on the table and knead the white dough, purple potato dough, and brown sugar dough separately to fully exhaust the air. (I used a rolling pin to roll it out, then roll it up, then roll it out, and I repeated this method five or six times. After all, my kneading skills are not professional. If the dough sticks to my hands, I sprinkle some flour on it and it won’t stick.)

12. Take some dough separately, roll them into long tongue shapes, stack them up freely, roll them up and knead them into long strips.

13. This is purple sweet potato noodles. Roll it into long strips and cut it into even-sized dough with a knife. Put it on the steaming rack and put a wet cloth on it. After arranging the dough, ferment it again in the pot (very important). After 15 minutes, the steamed bun dough will be light in the hand and the volume will be larger.

16. Steam for about 25 minutes. Don't open the lid right away. Wait three minutes before opening it.
