How to make Hakka wedding cakes

If we want to reduce the occurrence of diseases, we should not always eat out in restaurants. After all, restaurant dishes contain more seasonings and the ingredients may not be hygienic. Cooking by ourselves is relatively healthier. The method of making Hakka wedding cakes is very simple and can also help promote health.

1. Prepare the ingredients. My family grinds the glutinous rice flour by ourselves. When grinding the flour, we put the red yeast rice flour into the rice. If there are large grains of flour, we need to sift them first. You can use white sugar. The one next to it is the grinder (the above ingredients can make about 70 pieces. If you have fewer people, you can make less)

2. First, you need to cook the sugar paste. Add white sugar into 700 ml of water and then add about 80 grams of sticky rice flour. The picture shows the sugar paste.

3. Stir clockwise until the sugar paste is cooked. The sugar paste should be slightly thinner, as shown in the picture.

4. Then pour the sugar paste into the sticky rice flour, stir it in circles with chopsticks, and try to make all the dry powder stick to the sugar paste.

5. After the powder is mixed with sugar paste, the temperature is relatively low. At this time, use your hands to knead the dough until it is smooth. Knead the dough repeatedly for about 30 minutes. If it is too thin during the kneading process, you can add more powder directly. If it is too dry, you must add hot water, not cold water.

6. This is the dough that has been kneaded smooth. You need to continue kneading it for about 30 minutes, because the harder you knead the dough, the tougher the finished product will taste.

7. After kneading the dough, squeeze out balls the size of the mold and stuff them into the mold to form them. (Back view)

8. After the cake is formed, there is a "囍" character on the front. Of course, there are many other patterns.

9. Remove the cakes from the molds one by one, let them air dry, and then steam them in a pressure cooker for half an hour when the moisture is slightly dry. If you use other cooking utensils, the time will need to be extended by about 20 minutes.

10. After steaming, the red yeast rice turns red. Look at how festive the finished product is.

11. The toughness is very good and it will not break even if bent.

12. Let’s put the dish together, hehe

Cooking at home is definitely more hygienic. The method of making Hakka wedding cakes is simple and you can make them delicious even if you don’t have any talent for cooking.
