1. Mix the flour, salt, quick dry yeast and powdered sugar in the dough ingredients evenly, add water, and knead vigorously for 10 minutes until the dough becomes smooth and elastic (depending on the water absorption of the flour, the water in the recipe needs to be added as appropriate until it becomes a soft dough).

2. Cover the kneaded dough with plastic wrap and let it relax at room temperature for 25 to 30 minutes.

3. Mix pure peanut butter, sesame oil and salt to make peanut butter filling, and make the peanut butter flowable. If the mixed peanut butter is still dry, you can add more sesame oil to dilute it. In short, add sesame oil slowly and little by little. (Peanut butter should be smooth. The granular type I used here is not easy to handle. It is easy to break the skin and leak the filling if you use a little force. Of course, it is best to choose pure sesame paste.)

4. After the dough has rested, roll it out on a chopping board sprinkled with anti-stick powder into a large thin dough. Pour the peanut butter filling on the dough and smooth it with a scraper or the back of a spoon so that the peanut butter filling is evenly spread on the dough.

5. Roll up from one end of the dough, stretching it while rolling, making the dough as thin as possible and rolling as many times as possible. When you roll it to the end, pinch the edge tightly. The step of rolling the dough is very important. The more circles you roll, the more layers the pancake will have.

6. Cut the rolled dough into 9 portions (the dough must be rolled many times. If it is not rolled enough, each layer of dough and peanut butter will be too thick, and the peanut butter will flow out from the cut surface when it is cut).

7. For each piece of cut dough, pinch the two ends together with your hands to prevent the peanut butter filling from sticking out.

8. After kneading, let it rest for 20 minutes. (Horizontal or vertical placement is optional)

9. Mix 1 tablespoon of honey and 1 tablespoon of water and set aside.

10. Place the dough vertically on the work surface and flatten it gently and slowly with your palms.

11. Use a rolling pin to gently and slowly roll it into a round pancake shape.

12. Use a brush to dip honey water and brush a thin layer of honey on the surface of each round cake.

13. Press the side brushed with honey water slightly into the white sesame seeds so that the surface of the dough is covered with white sesame seeds.

14. Place on the baking tray with the sesame side facing up.

15. Friends who like a very soft and fluffy texture, please note that you should let the sesame cakes ferment at room temperature for another 25-30 minutes before putting them into the oven. The baked sesame cakes will be very soft.

16. Put it into the oven preheated to 175℃ and bake for 20 minutes until the surface turns yellow and crispy.

17. The freshly baked sesame cakes are the most crispy, soft and delicious. When you bite into the pancake, you can see the clear layers. The more layers of sesame cake, the better it tastes.

18. Break the soft and crispy sesame cake, put a big piece of braised beef in it, it tastes very delicious, mix it with some cold dishes such as shredded chicken, stir-fry some vegetarian dishes, and drink some beer, it is also a delicious meal.
