Bitter Melon Baked Egg Recipe

The method of making baked bitter melon is very simple. First, we need to break the eggs into a bowl and mix them evenly, then cut the bitter melon into small pieces, fry the egg liquid in a pan, sprinkle the bitter melon pieces on it and stir-fry until the eggs turn golden yellow and then it is ready to eat. We can eat bitter gourd scrambled eggs on a regular basis to clear away heat, detoxify and lower blood sugar. It is a very beneficial food for health.

70g starch (corn), 30g wheat flour, 3g salt, 40g vegetable oil

Production steps

Method 1:

1. Crack the eggs into a bowl, add refined salt, flour, dry starch and a little water and beat evenly;

2. Cut the bitter gourd into small pieces, marinate it with salt and squeeze out the water;

3. Place the wok on the fire and heat the vegetable oil;

4. Pour the beaten egg liquid into the pan and spread it into an omelet. Then sprinkle the bitter melon seeds on the omelet, cover it and bake until both sides of the omelet are golden brown. Remove from the pan and serve on a plate.

Method 2:

1. Slice the bitter gourd.

2. Boil water in a pot. Put the bitter gourd into the pot after the water boils. Take it out when the water boils again. (This way the bitterness will be less)

3. Rinse the bitter gourd with cold water and squeeze out the moisture.

4. Beat the eggs in a bowl; after the eggs are beaten into bubbles, pour in the bitter gourd and add seasoning. I only added salt and ground pepper. Stir well.

5. After the oil pan is heated, shake the pan to get some oil around the edges. Put only a small part of the ingredients in step 4 into the pan and stir-fry quickly. When the eggs are solidified, take them out immediately. Pour the bitter gourd and eggs back into the bowl and mix them with the remaining raw eggs and bitter gourd. This will help them to take shape when baking later. This is the most critical step.

6. Pour the contents of the bowl in step 5 back into the pot again. This time, you don’t need to add oil. Spread it out and bake it slowly over low heat.

7. When the eggs on the surface are almost solidified, turn it over and continue baking. When it is almost done, you can take it out of the pan.

Ingredients: eggs, bitter gourd, red pepper, onion, chives, salt, oil

1. Prepare the ingredients, cut the bitter gourd into small dices, cut the red pepper into small dices, chop the shallot, beat the eggs and set aside, cut the onion into 1cm thick slices, and tear it into onion rings;

2. Add diced bitter melon, diced red pepper and chopped shallot to the egg mixture, add salt and mix well;

3. Add oil to a frying pan, heat over high heat until it is 50% hot, then turn to medium-low heat, add onion rings, pour egg liquid into the onion rings, slowly heat until the egg liquid solidifies, turn over and fry for a while until the inside is fully cooked.
