1. Wash the chicken feet, cut off the nails, and split them into two.

2. Prepare ginger and star anise

3. Put the chicken feet in cold water and boil them with a few slices of ginger.

4. Then add vinegar and sugar and cook for 5 minutes

5. Then remove and drain the water

6. Then add half a pot of oil to the pan, when it is 50% hot, put the chicken feet in until they turn slightly yellow, then take them out. There will be a little bit of oil at the beginning, use the pot cover to block it

7. Then soak the fried chicken feet in ice water for more than 3 hours

8. The skin of the soaked chicken feet is a little wrinkled, then take them out and drain the water

9. Prepare the sauce, pour in oyster sauce, light soy sauce, dark soy sauce and water and mix well

10. Preheat the pan, add peanut oil, and sauté ginger, star anise, and cinnamon until fragrant.

11. Pour in the sauce and bring to a boil.

12. Then pour in the chicken feet so that each one is coated with the sauce and cook for a while.

13. Move it to a plate, put it in the pot, cover it with a lid, and steam it over high heat for 30 minutes.

14. Take it out after steaming and add the sauce on the plate when eating. It is delicious.
