How to make delicious pig's trotters

Pig's trotters are what we often call pig's trotters. They are rich in collagen, which is very helpful for the activity of skin cells and can make your skin more hydrated and elastic. Ingredients: 400g pig's trotter, cooking wine, ginger slices, scallion segments, peppercorns, star anise, chili peppers, garlic cloves, salt, light soy sauce, and dark soy sauce.

1. After buying the pig's trotters, ask the vendor to cut them into pieces and take them home to rinse them. Put it into boiling water and remove it after all the blood is boiled away.

2. Rinse the pig's trotters with cold water after blanching and drain. (This hot and cold makes the pig's trotters more chewy and delicious~)

3. Pour pig's trotters into the electric pressure cooker (or pressure cooker), add water (just enough to cover the trotters), put appropriate amount of cooking wine, ginger slices, scallion segments, a little pepper, and 2 slices of star anise, and stew for about 40 minutes.

4. Take out the stewed pig's trotters, drain the water, and keep the soup.

5. Pour oil into the wok, add chili peppers, ginger slices, and garlic cloves, stir-fry until fragrant, then add pig's trotters and stir-fry, add appropriate amount of salt, light soy sauce, and dark soy sauce (a little more), and continue to stir-fry.

6. Add the remaining soup from stewing the pig's trotters into the pot in batches, stir-fry constantly, cover the pot, bring to a boil over high heat and then simmer over low heat; do this twice until all the soup is used up and the pig's trotters are completely stewed and soft, then add chicken essence and serve.

How to make delicious recipes: braised pork trotters

Ingredients: 750 grams of pig's trotter, 13 grams each of salt and green onion, 8 grams of ginger, 25 grams each of sesame oil and cooking wine, 5 peppercorns, 50 grams of rock sugar, and 1,300 grams of soup.

1. Shave the hair off the pig's trotters, clean them, chop off the claws and split them into two halves. Boil them thoroughly in water and then put them in cold water.

Crush ginger and green onion for later use;

2. Heat a little sesame oil in a frying pan, add rock sugar and fry until it turns purple.

Adjust to light red;

3. Add pig's trotters, cooking wine, onion, ginger, salt and pepper.

Remove the floating foam, cook over high heat until the pig's trotters are colored, then switch to low heat and cook until the sauce thickens.

Tips: When using a pressure cooker, be careful not to let the water in the pot dry up. After turning off the heat, be sure to wait until the pressure cooker stops emitting steam before opening the lid.

Ingredients: chopped raw pig's trotters;

Seasoning A: garlic, old ginger, bean paste, dried chili pepper, peppercorns, cardamom, bay leaves, fennel, galangal, star anise;

Seasoning B: cooking wine, dark soy sauce, chicken essence;

1. Add oil to the pan, stir-fry garlic, ginger and bean paste when the oil is 7 layers hot, then add the remaining ingredients in seasoning A into the pan and continue to stir-fry;

2. Then pour the pig's trotters into the pot and stir-fry;

3. After frying for a while, add appropriate amount of water to the net pot (the amount of water should be enough to cover the pig's trotters), and add seasoning B to adjust the taste;

4. Take a clean pressure cooker and pour the pig's trotters in step 2 into the pressure cooker;

5. Cover the pressure cooker with a lid and close the air valve. Bring to a boil over high heat until the pressure cooker starts to emit steam , then turn to medium heat and continue to cook for 15-20 minutes before turning off the heat.

6. After turning off the heat, let the pressure cooker stand for 15 minutes until the steam stops. Then, open the lid and serve the braised pork trotters.
