How to make no-bake egg caramel pudding

1.1 Use the lowest heat to slowly melt the sugar in the pot until it is completely dissolved into a brown viscous liquid (be sure to use a very low heat to slowly melt it!!)

2.2 Pour some sugar into a small milk pan (this black pan is what I bought to burn caramel...it ended up burning like this easily)

3.1 Pour the burnt caramel into the prepared pudding container

4.2 I think caramel that is too thick is bitter, so my habit is to add a little boiling water to dilute it immediately after the caramel is completely melted (if you like a slightly bitter taste, it’s OK not to add it). If you add water, the caramel in the pot will stick into lumps and produce a lot of bubbles. But it doesn't matter. Just continue to cook and stir to melt the caramel. Then turn off the heat and continue to stir the burnt caramel with a spoon until the bubbles disappear completely.

5. Remove the egg white from the egg and use a whisk to beat the egg yolk as evenly as possible.

6. Pour a certain amount of milk into the beaten egg yolks and mix well. I usually take two boxes of 250ml liquid milk and three egg yolks.

7. Mix the gelatin powder with boiling water. Do not mix it too thin, it should have a certain viscosity. (I usually add 4 teaspoons of gelatin powder to two boxes of milk. Don’t add too much to prevent the pudding from being too hard.)

8. According to your personal preference for sweetness, add a certain amount of white sugar to the milk (if you have vanilla extract, add half a spoonful at this time), turn on the heat to heat the milk, be careful not to boil it, the purpose of heating is to allow the sugar to dissolve completely. After the sugar is completely melted, pour in the gelatin powder, then stir until it is completely dissolved and the milk becomes thicker. Finally, pour the cooked milk into the container containing caramel (pour as gently as possible to avoid too many bubbles), let it cool slightly, and then put it in the refrigerator for about 2 hours, then you can start eating.
