1. Prepare the ingredients, wash the duck, chop it into pieces, remove the yellow part of the garlic tail, wash it and cut it into thin pieces for later use

2. Heat the pan, pour in the duck pieces, turn to medium-low heat, and slowly stir-fry until the duck skin tightens, the duck fat under the skin releases oil, and the duck meat changes color

3. After frying until oil comes out, cut the ginger into large pieces, put it into the duck meat and stir-fry with duck oil until the aroma comes out.

4. Now you can open the beer and pour a small cup of beer, covering the mouth of the cup.

5. Pour the remaining beer into the fried duck meat

6. Turn to high heat, bring to a boil, then turn to low heat and simmer for 40 minutes

7. After about 20 minutes of cooking, add salt. It is very important. Adding salt too early will make the duck meat tight and difficult to stew.

8. After 8 minutes, add soy sauce, seafood sauce and rock sugar, and turn to high heat to thicken the sauce.

9. When the duck starts to release oil again, add the dried chili peppers and green garlic and stir-fry quickly. Turn off the heat immediately when they are cooked.

10. Put the prepared iron pot on the glass of beer, and then quickly turn it upside down. The beer glass will stand on the iron pot. Some beer will overflow because of the uneven bottom of the pot, but it doesn’t matter. What you want is the effect of beer seeping out slowly.

11. Carefully put the fried beer duck into the iron pan, with the beer glass as the center, and then place it on the stove. Heat the iron pan and serve it hot, or heat it slowly over low heat after serving. The beer will slowly penetrate into the duck meat as it heats, making the beer duck more layered.
