How to cook chicken with tea tree mushroom

1. Half a chicken (I bought it frozen, so soak it in ginger water for half an hour).

2. Remove from the pot and chop into pieces. Boil pepper water, add chicken and one tablespoon of cooking wine. Do not cover the pot. Cook for three minutes. Remove from the pot and rinse with cold water.

3. Soak the tea tree mushrooms until soft (to soak them, wash them first, put them in warm water, boil them on low heat, and then soak them for half an hour, because tea tree mushrooms are a bit hard and the taste will be worse if they are not soaked well).

4. Heat three tablespoons of oil in a pan and stir-fry the chicken over high heat until the skin turns yellow and the meat is slightly dry.

5. Add onion, ginger, garlic, bay leaves, etc. and stir-fry until fragrant. Add one tablespoon of soy sauce, half a tablespoon of sugar, and half a tablespoon of white wine (you can use other wines instead, as there was no cooking wine in the countryside when I was a child).

6. Add tea tree mushrooms, stir-fry for a while, add warm water, bring to a boil over high heat, and simmer over low heat for 40 minutes to an hour and a half. Add salt, five-spice powder, and MSG, then cook over medium heat for a while. Sprinkle with coriander and chopped green onions when serving.
