Kill a tilapia, open its belly, and clean out all the blood inside, especially the black membrane and tendons in the belly. 2. Boil water in a pot, put the fish in, turn it over in 2 seconds, and remove it from the pot in 4 seconds. This step is mainly to remove the mucus on the tilapia. 4. Take a long plate, place 3 chopsticks, and put the tilapia that has been blanched in boiling water on it. This will make it easier to steam and take less time. 5. Slice the ginger, cut the green onion into sections, and chop the chili into small pieces. Pour in the steamed fish sauce, a little salt, sugar, pepper, fish sauce, and a little water and mix well. 6. Pour the mixed sauce over the fish. 7. After the water in the steamer boils, put the fish in and steam over high heat for 6-8 minutes (calculate the time according to the size of the fish). Turn off the heat and simmer for 2 minutes before taking out. 8. Slowly turn the chopsticks and take them out. While they are still hot, spoon the sauce over the fish to make it more flavorful. 9. Cut the green onion into thin strips, soak it in water and spread it evenly on the fish. Cut the red pepper into strips and put it on the fish. It is ready to eat.
