1.1 Curry beef filling: Dice beef and baby cabbage, add curry powder, salt, sugar and cooking oil and mix well. 2. Chive and tofu filling: chop the chives into small pieces, dice the tofu, chop the chili pepper, add salt, light soy sauce, white sugar and cooking oil and mix well.

2.2 Activate the dry yeast in 30℃ warm water, and add a small amount of white sugar. After about 5 minutes, pour it into the flour. It is recommended to abandon clean water and add pure milk to the flour. Start kneading the dough until it is shiny (hands, surface and bowl). Cover with plastic wrap and start fermenting. After 1-2 hours, the dough becomes fluffy and full, and a honeycomb shape can be seen on the cross section. Take it out and continue kneading the dough to squeeze out the air. Cover it for secondary fermentation. Take it out after about 20 minutes, knead it again, and set aside.

3. Roll the dough into strips, cut into equal-sized portions, flatten them with your palms, and use a rolling pin to roll them into thin skins in the middle and around the edges, and wrap the fillings.

4. Put the pot on the stove with cold water, cover it with a lid, let it sit for 15 minutes to ferment again, steam it for 8 to 10 minutes after the water boils, turn off the heat, and simmer for 10 minutes.
