How to make chocolate cake

1. First, the usual family photo of materials. Here, the panda uses chocolate powder that is easy to melt.

2. Melt the butter in a water bath for 30 seconds or in a water bath, then add the chocolate powder and stir well. It doesn’t matter if it is not completely melted, because a lot of liquid will be added later. If you use chocolate blocks, you need to heat them in a water bath until they melt.

3. Add milk and mix well

4. Separate the eggs into egg yolks and egg whites, and put the egg whites in a large bowl without water or oil.

5. Add the egg yolks one by one into step 3, stir one before adding the next one, stir everything well and let it sit for 10 minutes.

6. Finally, add the flour and mix well. Don’t stir too hard to avoid gluten formation. Just stir gently until the flour is no longer visible.

7. Add 1/3 sugar to the egg white and start beating with an electric whisk.

8. When the foam is thick as shown in the picture, add sugar and lemon juice [or white vinegar] for the second time.

9. Add sugar for the third time when the bubbles appear as shown in the picture.

10.Finally, beat the egg whites into a dry foaming state as shown in the picture

11. Separate 1/3 of the egg white paste into the previous chocolate batter and mix well. Do not stir too hard in circles, stir from bottom to top

12. After mixing well, pour the batter into a large bowl and mix it evenly with the remaining egg white paste. Use a spatula to stir from bottom to top.

13. Pour the cake into the mold without applying oil - the cake mainly expands by climbing the wall of the mold, and it will not be fluffy if it is oiled. Knock it hard on the table a few times to knock off the coarse bubbles and you can start baking.

14. Panda's oven only has a lower fire, so bake at 180 degrees for 40 minutes and then turn to 160 degrees for 20 minutes. For upper and lower fire ovens, please reduce the time as appropriate.

15. To prevent shrinkage after baking, do not rush to demould after taking it out of the oven. Turn the mold upside down to cool it down before taking it out. If it sticks, use a knife to cut a circle along the wall of the mold and it will come off.

The chocolate cake diagram is not difficult to understand, but it is not very easy to make it well. This requires our own attention and diligent practice.
