How to make minced meat with soy sauce and chrysanthemum eggplant

Do you salivate every time you see a food show on TV? But when I wanted to follow along, I found that the show had already ended. Don’t be discouraged, today I will teach you the specific steps for making minced meat with soy sauce and chrysanthemum eggplant.

1. Chop ginger, garlic and green onion;

2.12 Cut the lean meat into small pieces and mix well with salt, soy sauce, cooking oil and starch;

3.21 Cut the eggplant into sections and cut them lengthwise (leave about 1 cm at the bottom and don’t cut it off), soak them in salt water and set aside;

4.1 Prepare a dish of starch, squeeze out the water from the pickled eggplant and coat it with starch;

5.2 Peel and chop the tomatoes and set aside;

6. Place the eggplants coated with starch in a waterless dish for later use;

7. Heat the pan and pour in twice as much oil as usual for cooking. Fry the purple eggplants one by one until soft, then remove and drain the oil;

8. Leave some oil in the pan, pour in the lean meat and fry until it changes color;

9. Push the lean meat aside, add the chopped ginger, onion and garlic and stir-fry until fragrant;

10. Pour in the chopped tomatoes and use a spatula to squeeze out the tomato juice;

11. Pour the fried eggplant into the pot, stir-fry, add a little hot water, cover and simmer for three minutes;

12. Add the barbecue sauce and stir-fry evenly, then sprinkle with chopped green onions.
