How to make soft pancakes with dough?

Soft pancakes are actually a thin layer of pancakes with a bit of toughness that are common in life. The method of making soft pancakes is not difficult, but friends who are just learning to make them will feel a little uncomfortable because they need to control the dough skills and pay attention to temperature control.

The first approach - the lazy approach

Add a little salt and vegetable oil to the flour and mix it very thinly. After heating the frying pan, dip gauze in the thin mixture and wipe it on the hot pan to make a spring pancake.

The second approach - the expert approach:

1. Ordinary flour is relatively thin, add a little salt and vegetable oil, beat vigorously in one direction, and after it is thoroughly evenly mixed, let it rest for 1 to 2 hours. The process of letting the flour rest is very important. If it is not rested well, it cannot take shape. Adding vegetable oil is to increase the toughness of the flour.

2. Heat the pan (not too hot, just turn it to medium temperature if you use an electric stove), grab a ball of flour and spread it in a circle around the outside of the pan, then spread it in circles from the outside to the inside. When it turns white in color, it is cooked and you can peel it off. The key is to control the temperature well. If it is too low, it will not stick to the pan. If it is too hot, the ones in front will be cooked and curl up before one circle comes down, and they will not be able to connect with the ones in the back.

The third method - the improved version of the expert

Use high-gluten flour and mix the flour according to the second method. There is no need to let it rest after mixing. You can start spreading it immediately. The flour has good gluten strength and is easy to shape. This is one of the biggest differences I can feel between high-gluten flour and low-gluten flour. The pancakes made with high-gluten flour are more fragrant and taste better.
