How to make light yogurt cheese

1. Separate the egg yolk and egg white. Remember that the bowl for the egg white must be free of oil and water.

2.1 Add 2 drops of lemon juice to the egg whites and beat until they are in the shape of fish eyes.

3.2 Mix yogurt and milk evenly in a container, add 2-3 drops of lemon juice and mix well, add melted butter in 3 batches and mix well, then add egg yolks one by one, stir well before adding the next one, finally sift in low-gluten flour and corn starch and mix well.

4. Add fine sugar in 3 more batches until it becomes wet foam.

5. Add 1/3 of the whipped egg whites to the batter mixed in step 2, then pour it back into the egg white batter and stir well.

6. Preheat the oven to 320F/160 degrees, pour the batter into the mold, shake it on the table a few times to remove large bubbles inside, put it into an ice water bath, bake at 320F for 20 minutes, then lower the temperature to 240F/120 degrees and bake for 1 hour. If the mold floats up, put something heavy on it to hold it down. I use a chicken rack, but you can also use a baking tray. I want to see the color on the surface, so I use something hollow to put it on top.
