How to make fish balls in clear soup

1. Wash the eggs, ham, soaked mushrooms and rapeseed hearts and set aside.

2.1 Remove the head and lateral line of the grass carp, and use a knife to carefully slice the grass carp meat, avoiding any large bones.

3.2 Kill the grass carp and clean it.

4.12 Place the fish meat flat on the chopping board, with the knife at a 45-degree angle to the chopping board, and slowly scrape the fish meat.

6.1 Pour the minced fish into the container of a food processor and add water in a 1:1 ratio. If you like fish balls with greater elasticity, add less water.

10. Pour the processed fish paste into a small bowl, add a little salt and stir vigorously in one direction with your hands. If you feel that the meat sauce is not stirred enough, add some salt and continue stirring until the meat sauce becomes thick.

11. Add egg white into the meat sauce and continue stirring.

12. The water in the pot should not be too hot. Then use a small spoon to make the fish paste into balls and carefully put them into the pot. Cook on low heat and then remove from the pot and put into a basin of water.

13. In another pot, add water, salt and chicken stock, and bring to a boil over high heat.

14. Add fish balls.

15. Add the rapeseed hearts, ham slices and mushrooms, bring to a boil over high heat and serve.
