1.1 After the oil in the pan is hot, add chopped green onion and ginger slices and stir-fry until fragrant; add lotus root slices and red pepper segments into the pan and stir-fry

2.2 Peel the tender lotus root, cut it into thin slices, and soak it in water with white vinegar for 5 minutes to prevent discoloration. Then chop the scallion whites and leaves into fine pieces, cut the ginger into small slices, and cut the red pepper into sections.

3. Add water while frying, pour in slowly (add water twice)

4. When the lotus root slices are somewhat transparent and not solid, sprinkle in salt and stir well. Before removing from the pan, sprinkle in chopped green onion leaves and mix well.
